Step by step instructions
Step 1: Make the cheesecake crust
To start, line a springform cake pan with non-stick baking paper at the bottom. Then, spray the sides with non-stick baking spray. Set it aside.
Next, start making the cheesecake crust. Place the biscuits or crackers inside a food processor. Pulse it until you have a uniform fine crumb. Then, add the caster sugar and melted butter. Mix until you have a uniform wet crumb mixture.
Step 2: Set the cheesecake crust
Press the fine crumbs into the lined cheesecake pan. Use the back of a flat measuring cup or glass to level the crumbs and pack them in tightly.
You can create a slight edge around the side of the pan if you’d like. But, it isn’t necessary. Then, set the crust inside the fridge to harden for about 30 minutes.
Step 3: Make the no-bake cheesecake batter
To start, place the cream cheese, caster sugar, and vanilla extract in a large mixing bowl. Beat the ingredients until the sugar starts to dissolve and the mixture becomes fluffy. You should also have a lump-free cream cheese base.
Then, add the heavy cream and whip the mixture on high. Keep mixing until the cheesecake batter becomes fluffy and can hold its shape.
Finally, fold in the chopped Galaxy caramel bar and make sure it’s well distributed.
Step 4: Set the cheesecake
The next step in this Galaxy caramel cheesecake recipe is to pour the batter into your set cheesecake crust. Then, wrap the entire pan with plastic or saran wrap.
Place the cheesecake inside the fridge and allow it to set for at least 6 hours. Preferably, it should be set overnight (10 hours).
Step 5: Remove the cheesecake from the pan
Once your cheesecake has been set, you can remove it from the pan. Smooth the outside with a slightly heated palette knife to create a beautifully smooth surface.
Place the cheesecake on a serving board or cake stand.
Step 6: Decorate your cheesecake
You can play around with how you decorate this Galaxy caramel cheesecake recipe. We like to drizzle a generous amount of caramel and chocolate sauce over the surface. Then, top the cheesecake with whipped cream and Galaxy chocolate buttons and pieces.
You can create any decorative details that you’d like.
Expert Tips And Tricks
- You can make your own chocolate sauce using melted Galaxy chocolate bars. It is incredibly easy but takes more time and effort.
- The same goes for the caramel sauce. There are loads of easy recipes out there. But again, they require extra effort and work.
- If you’d like, you can actually make this recipe completely vegan. Galaxy chocolate has vegan options. Then, you just need to substitute the cream cheese, heavy cream, butter, and whipped cream with vegan alternatives.
- Always use room-temperature ingredients when making a cheesecake batter. This will ensure you have a lump-free mixture that isn’t overmixed. The ingredients will blend together effortlessly.
- To properly remove the cheesecake from the pan, first, separate it from the sides. You can use a slightly heated thin knife blade. Remove the side of the springform pan. Next, loosen the cheesecake crust from the base of the pan. Use two large palette knives or spatulas to lift the cheesecake off the base and transfer it to the serving board.
