If you were just as obsessed with these cheesecake bites as we were, you know that it is nearly impossible to find a copycat recipe. Luckily, we have dug deep and developed the best version of BWW cheesecake bites ever. And, what makes this recipe even better is that you can use any cheesecake you’d like (even store-bought ones). It is easy to make and most of the time is spent waiting for the balls to freeze.
Buffalo Wild Wings Cheesecake Bites Recipe
To our surprise, not many people actually know about these Buffalo Wild Wings cheesecake bites. But then again, they aren’t as easy to find these days, let alone a recipe to make your very own!
These cheesecake bites are made with classical cheesecake balls coated with a graham cracker crust. Then, you can choose between either a chocolate dipping sauce or caramel dipping sauce.
Now, most people claim that the caramel sauce is much better, but personally, we like both equally.
These fried cheesecake bites were a part of Buffalo Wild Wings’ dessert menu but got discontinued along with some other famous desserts. For example, the dessert nachos were removed recently which was served with ice cream and some cheesecake bites.
What You Will Need To Make Cheesecake Bites BWW-style
Ingredients for the Cheesecake Bites
- 8 ounces cream cheese, softened
- 1 teaspoon vanilla extract
- 1/2 cup fine granulated sugar
- 1/4 cup cream
- 2 cups graham crackers, finely crushed
- 1/2 cup cake flour
- 2 large eggs, beaten
- Vegetable oil, for frying
Ingredients for the Chocolate Sauce
- 1/2 cup fine granulated sugar
- 1 tablespoon cake flour
- 1/2 cup cocoa powder, sifted
- 1 cup cream
- 4 teaspoons salted butter
- 1 teaspoon vanilla extract
Ingredients for the Caramel Sauce
- 1/2 cup granulated brown sugar
- 3 tablespoons butter, softened
- 1/4 cup cream, room temperature

Step by Step Instructions For Making Fried Cheesecake Bites
Step 1: Make the cheesecake bites batter
Combine the softened cream cheese and vanilla extract in a large mixing bowl. Then, beat the mixture at a high speed. Add the fine granulated sugar and continue beating the mixture until the sugar is evenly incorporated.
Scrape down the sides before adding in the cream. This step is crucial to ensure that all of the ingredients are evenly mixed. Once you have added the cream, beat the mixture at a high speed for roughly 4 minutes or until your batter is completely smooth and very thick.
Place the cheesecake batter inside of a shallow container and freeze it for at least 1 hour.
Step 2: Prepare the buffalo wild wings cheesecake balls
Once the cheesecake batter has been chilled, remove it from the freezer. Line a baking tray with non-stick baking paper.
Using a small ice cream scoop, scoop out small balls of cheesecake and place them onto the lined tray. Place the tray back into the freezer and allow the balls to freeze for another 2 hours.
Step 3: Make the chocolate sauce
While the cheesecake bites are freezing, make the dipping sauces. To make the chocolate sauce, combine all of its dry ingredients into a mixing bowl. Set it aside until it’s needed again.
Then, combine the cream, butter, and vanilla into a medium saucepan and heat until the butter is completely melted. Slowly add the liquid ingredients to the dry ingredients while whisking.
Then, add the mixture back into the saucepan and bring it to medium-high heat. Allow the sauce to come to a simmer while whisking continuously. The chocolate sauce will take about 5 minutes to become thick. Remove the sauce from the heat and allow it to cool.
Step 4: Make the caramel sauce
You can also make the caramel sauce while the cheesecake bites are freezing. Place the brown sugar into a saucepan over medium-high heat. Then, stir the sugar until it is completely melted – don’t worry, it will clump first before melting.
Once the sugar has melted, stop stirring and allow it to become amber in color. When you are happy with the color, remove the melted sugar from the heat. Slowly whisk in the butter until it is completely melted. Then, slowly add the cream to adjust the consistency.
Allow the caramel dipping sauce to cool before using.
Step 5: Make the fried cheesecake bites
Place the crushed graham crackers, cake flour, and eggs into three separate bowls. Make sure that the eggs are beaten well.
Take a frozen cheesecake ball, dip it into the flour, then egg, and finally, the graham crackers, Do this twice. Then, place the ball back onto the lined baking tray.
Repeat this step for all of the balls and place them back into the freezer for 15 minutes.
Step 6: Deep-fry the cheesecake bites
While the bites rest for another 15 minutes in the freezer heat the frying oil to about 350°F (180°C).
Fry each frozen ball for about 1 minute. The crust should become crispy and golden brown while the frozen cheesecake will become melty on the inside. Once fried, remove them from the oil and drain them on a paper towel.
Serve immediately alongside the delicious homemade chocolate and caramel dipping sauces.
Tips and Tricks for this Buffalo Wild Wings Dessert
- You can make virtually every element of this recipe in advance. You can make the cheesecake batter, shape the balls, and store them inside a container in the freezer until needed. Both the chocolate and caramel sauce will also last in the fridge for up to two weeks!
- You can use any cheesecake for this recipe, even leftover cheesecake batter that has been frozen. But, if you want to cut out even more time, buy a store-made no-bake cheesecake. The no-bake cheesecakes are easier to mold compared to the baked cheesecakes.
- For the caramel sauce, you can adjust the intensity of the flavor and color. Simply leave the melted sugar to darken and develop nuttier flavors if you are looking for a richer sauce. Otherwise, make a light caramel by not allowing the sugar to darken at all (this is an option most kids love). You can also add a pinch of salt to make a salted caramel sauce.
