For the Crust
- 1 package of graham crackers -crumbs-.
- 90 grams of melted butter
For the Filling
- 600 grams of cream cheese -at room temperature-
- 2 cups of sweet potato puree
- 3/4 cup of whole cream
- 1 1/2 cups of granulated sugar
- 2 tbsp of vanilla extract
- 3 tbsp of all-purpose wheat flour
- 1 tsp of cinnamon powder
- 1 pinch of ginger powder
- 1 pinch of nutmeg powder
- 1/2 tsp of salt
- 5 medium-sized eggs
Step-by-Step
Step #1: Cooking the sweet potatoes
We start by cooking the sweet potatoes, preheating the oven at 180 degrees Celsius. In the meantime, grease the sweet potatoes with oil and place them on a tray and bake for 1 hour or 1 hour and a half.
Step #2: Make your puree
Next, when the sweet potatoes are already soft, remove them from the oven, let them cool, peel, and crush them until puree texture.
Step #3: Make your crust
For the crust, place the graham crackers in a food processor until they are made crumbs. Add the previously melted butter, and if you need a little water, add 2 tablespoons approximately.
Place the graham crumbs in a 9-inch springform pan bottom. Flatten well and go up a little on the shores.
