6. White Chocolate

This doesn’t contain any cocoa powder -the color differentiator-. Its main ingredient is cocoa butter, it has 20% of it, mixed with soy lecithin, 14% of milk, vanilla, and 55% of sugar.

7. Unsweetened Cocoa Powder

Generated by fermenting, drying, roasting, and grinding the cocoa tree seeds.

8. Couverture Chocolate

This is the highest quality of chocolate, it contains 35% of cocoa solids and 31 to 39% of cocoa butter. Thus texture and flavor are supreme. This is the best one for dipping and tempering. Although, not the best for baking.

9. Compound Chocolate

Made from cocoa, palm or coconut oil, and sugar. It’s a low-cost alternative to regular chocolate.

10. Ruby Chocolate | A gift from mother nature

Discovered in 2017. Famous for its pretty pink color, it doesn’t have any food coloring or additives. Its taste has a fruity tartness flavor.

  • 60g sugar
  • 25g butter
  • 20g unsweetened cocoa powder
  • 2 tsp cornstarch
  • 1/2 tsp vanilla extract
  • pinch of salt

Equipment:

  • digital gram scale
  • sieve
  • 1 medium bowl
  • 1 large bowl
  • 5 small bowls
  • 1 teaspoon
  • 1 deep casserole or pot
  • heatproof spatula
  • manual whisk

Step-by-Step Instructions

Step One:

Weigh all the ingredients on the scale.

Step Two:

Sift cocoa powder and cornstarch, mix well.

Step Three:

Put the cocoa mixture in a pot, add the milk, and whisk.

Step Four:

Add the sugar, vanilla, and salt. Mix until combined.

Step Five:

Cook on medium heat for 6 minutes. Don’t stop stirring.

Step Six:

Once it gets thick, turn off the heat. Stir with your heatproof spatula and let it rest.

Step Seven:

Strain your chocolate sauce in a bowl, and let it cool at room temperature.

Step Eight:
