Honestly, you can tell a lot about a cheesecake before you even touch the pan, and we would rather look first and poke it second.
Check The Edges
So, the outer 2 inches or so should look matte and set, slightly puffed even, not shiny or wet-looking anymore. If the whole surface still looks glossy edge to edge, it is not there yet, that sheen is a sign of batter that has not finished setting.
Watch The Color, Not Just The Set
Now, a light golden tint around the very edge is normal and even expected on most bakes, but if that color is creeping in toward the center or turning deep brown, the oven is running hotter than it should and you are closer to overbaked than done.
Cracks Are A Warning, Not A Green Light
Well, this one trips people up. A crack forming across the top does not mean it is ready, it usually means the opposite, that it has already gone past done and dried out at the surface. But, by the time you see a crack, the damage is there whether you pull it now or not.
So, matte edges, restrained color, and no cracks yet, that is what we look for before we ever touch the pan.
