Now, this is one of those steps where rushing costs you the whole cake, we have learned that one the hard way more than once.
Cool It Fully First
So, a cheesecake needs to come down to room temperature on the counter, then spend real time in the fridge, several hours at least, overnight if you can manage it, before the ring ever comes off. Pull it while it is still warm or even just cool and the middle has not fully set, so it slumps the second it loses the pan’s support.
Loosen Before You Unlatch
Well, once it is chilled, take a thin knife or a small offset spatula and run it around the inside edge of the pan, right where the cake meets the metal. This breaks the seal in spots where the top has caramelized slightly and stuck, and it makes a real difference in how clean the release looks.
Then Open The Latch
And unclip the ring and lift it straight up rather than pulling it sideways. If it still feels tight anywhere, that hot damp towel wrapped around the outside for a minute does the rest, it is a small trick but it works better than forcing anything.
So, chill it properly, loosen the edge, then unlatch, we would not skip any of those three even on a rushed weeknight.
