A homemade cheesecake is good in the fridge for about five to seven days, kept covered and properly cold. That is a bit longer than most people expect.
No-bake versions are a little more delicate, so we would eat those within four or five days instead.
Does Store-Bought Last Longer?
Often, yes, thanks to preservatives. But, go by the date on the box rather than assuming it matches a homemade one, since recipes and additives vary a lot between brands.
What Actually Shortens The Life Of It?
So, leaving it uncovered is the big one. Once you have cut into it, press some plastic wrap against the exposed edge, or the cut side dries out and starts tasting stale well before the rest of the cake does.
Then there is room temperature. Two hours out of the fridge is the limit, and after that it belongs in the bin, not back on the shelf.
How Do You Know When It Is Actually Gone Bad?
Well, trust your nose first. A spoiled cheesecake smells sour, like milk that has turned, rather than fresh and creamy.
Then look at it. Mold, dark patches, or a slimy surface all mean it is finished. A little tang, though, is completely normal, that is just the cream cheese.
