Why Is Cheesecake So Good?

Honestly, this is more of an opinion question than a factual one, but we will give you our honest take since we have eaten more cheesecake than is probably reasonable at this point.

It Is Really A Balance Thing

So, a lot of it comes down to the fat, sugar, and tang all working against each other in one bite. Cream cheese brings a sharp, slightly sour edge, the sugar softens that, and the richness from all that fat makes it feel indulgent without being cloying the way a straight sugar dessert can be. Then there is the crust underneath, crunchy against a filling that is basically silk, and that contrast is doing a lot more work than people give it credit for.

Now, some of the credit for the style most of us picture goes back to Arnold Reuben, a New York restaurant owner credited with the cream-cheese version in the late 1920s, and Lindy’s Restaurant, which made the style famous around the same era. Nobody agrees completely on who did what first, but that is where the “New York cheesecake” reputation traces back to.

So, fat, sugar, and tang all pulling against each other, plus that crunchy-to-silky contrast, that is our honest answer for why it works so well.
