So, in the fridge, overnight, if you can plan ahead that far. That is the safest way to defrost any cheesecake, restaurant-made or homemade, and it keeps the texture closest to how it started.
Short on time? Leaving it on the counter works too, roughly an hour for a single slice, up to two hours for a whole cake, depending on your kitchen’s temperature. Just do not leave it out longer than that once it starts to soften, we would still apply the same two-hour room temperature limit here as with any cheesecake.
Can You Microwave It To Speed Things Up?
Well, you can, in short bursts, but we would be cautious about it. Ten seconds at a time on a low setting, checking in between, works better than one long blast, which risks melting the edges before the center has even thawed. So, the fridge or counter method gives a much more even result if you have the time to spare.
So, plan ahead when you can. A slow, cold thaw beats a rushed one every time, for texture and for food safety both.
