  • 8 waffle ice cream cones
  • 8 graham crackers, finely crushed

Ingredients for the peach cobbler filling

  • 1/3 cup butter (divided)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of ground cloves (optional)
  • Pinch of ground allspice (optional)
  • 1 large can of peaches with juices (chopped)
  • 1/3 cup pecans (roughly chopped)
  • 1 small pound cake (crumbled to make 4 cups)

Ingredients for the cheesecake filling

  • 8 ounces salted butter (softened at room temperature)
  • 1 package cheesecake pudding mix
  • 2 teaspoons vanilla extract
  • 3 1/2 cups powdered sugar (sifted)
  • 2 tablespoons heavy cream

Instructions

  • Make the peach cobbler filling
    To start, line a baking dish with non-stick baking paper. Preheat your oven to 360ºF (180ºC).
    In a large mixing bowl. whisk together half of the melted butter, sugar, spices, and peaches. Make sure that the peaches are very well coated with the spiced butter.
    Then, add this mixture to the baking dish. Top it with 4 cups of crumbled pound cake, the remaining butter, and chopped pecans.
    Bake the crumble for 25 minutes. Then, remove it from the oven and allow it to cool completely.

  • Prepare the waffle cones
    While the peach cobbler is baking, make your waffle cones.
    Combine the chopped white chocolate and coconut oil in a large microwave-safe bowl. Then, heat it in 20-second intervals. Between each, make sure you mix the ingredients together well. Repeat the process until the chocolate is completely melted and smooth.
    Add a big spoonful of melted chocolate into a cone. Then, swirl the chocolate around on the inside so that it covers the entire surface. Pour out any excess remaining chocolate. Then, dust the inside with graham crackers.
    Set it on a lined baking tray and repeat the steps with the other cones. Leave them all to set.

  • Make the cheesecake filling
    Cream together the softened butter, cheesecake pudding mix, and vanilla extract. Make sure the mixture is lump-free and fluffy. Then, add the powdered sugar and heavy cream.
    Keep beating the mixture at a high speed to aerate it. This will ultimately create a fluffy cheesecake mixture.

Notes

You don't have to use store-bought waffle cones. You can also make some yourself at home. A waffle iron helps a lot. But, if you don't have the needed tools or time, you can just go buy some. Many bakeries will even sell you freshly made waffle cones (if they use the items themselves too).
You can also create a decorative band of white chocolate and graham crackers on the cones. Do this step after the chocolate inside the cone has set.
