Ingredients
  

For the crust:

  • 2 tbsp Besti monk fruit allulose blend 
  • 2 cups wholesome yum blanched almond flour 
  • 1 tsp vanilla extract 
  • 1/3 cup butter (melted) 

For the filling:

  • 3 large eggs 
  • 1 tsp vanilla extract 
  • 1 tbsp lemon juice 
  • 1 1/4 cups Besti powdered monk fruit allulose blend 
  • 32 oz softened cream cheese

Instructions

Making the crust:

  • Preheat your oven to 350 degrees Fahrenheit. Then, line the bottom of a nine-inch springform pan with your parchment paper.
  • Afterward, be sure to blend the dry ingredients. Then, mix the melted butter, vanilla extract, and almond flour in a medium to a large mixing bowl; do so till well combined. Please note that your dough will be pretty crumbly.
  • Next, press your dough into the prepared pan's bottom. After that, make sure to bake the almond flour cheesecake crust for approximately ten minutes. Likewise, you can do so till it is barely golden.
  • Lastly, ensure to set your crust aside to cool for about ten minutes.

Creating the filling:

  • Before anything else, beat your powdered Besti and cream cheese; do so till it becomes fluffy.
  • Next, beat in your eggs. Remember to do it one at a time. Lastly, add your vanilla and lemon juice.

Assembling and baking the keto cheesecake:

  • Be sure to pour the filling mixture into your pan over the crust. And do not forget to smooth the top using a spatula.
  • Afterward, put your keto cheesecake in your conventional oven and make sure to bake for around forty to fifty-five minutes.
  • Next, remove your keto cheesecake from your conventional oven. And if you find that the edges are stuck to the pan, be sure to run a knife around the edge; remember, do not remove your springform edge just yet. Afterward, let it cool in the pan on the counter till it reaches room temperature.
  • Then, ensure to cover your sugar-free cheesecake with cling wrap. After that, be sure to store it in the fridge for about four hours. Likewise, you can even keep it in the refrigerator overnight. And please do not try to remove your keto cheesecake from the pan; slice it before chilling.
