Triple Berry Sauce For Cheesecake

Ingredients
  

  • 1 cup fresh raspberries
  • 1 cup fresh strawberries sliced
  • 1 cup fresh blueberries
  • 1/2 cup caster fine sugar
  • 2 tablespoons honey
  • 1 1/2 teaspoon freshly squeezed lemon juice
  • Pinch of salt

Instructions

  • Simmer the Berries. In a medium-sized saucepan, combine 1/2 cup fresh raspberries, 1/2 cup sliced strawberries, and 1/2 cup blueberries. Add the castor sugar and lemon juice and give the mixture a stir.
  • Then, over low to medium heat, bring the berries to a slow simmer. Give them a final stir and allow them to cook for roughly 10 minutes, or until all of the sugar has been dissolved.
  • The berries should be soft, but not disintegrated.
  • Adjust the Sugar Levels. Our recipe doesn't contain a ton of sugar. So, if you feel like adding some more, now would be the time to do so.
  • But, do so one tablespoon at a time. If you don't have the biggest sweet tooth you don't want to over-sweeten the mixture.
  • Once you have added the additional sugar, you will need to continue cooking the berries until it too has been completely dissolved.
  • Puree the Berry Mixture. Once you have happy with the sugar level, you can continue cooking the berry mixture until the berries are completely soft.
  • Then, allow the mixture to cool slightly before blending it. You can also use a food processor. Then, blend until the mixture is smooth.
  • Add the pureed berries back into the saucepan. Finally, add the rest of the raspberries, strawberries, and blueberries to the pureed mixture.
  • Bring the berries back to a simmer and cook until the berries become soft. You can mash them lightly with a fork or keep them whole.

Storing This Triple Berry Sauce For Cheesecake In A Fridge

  • This sauce is very easy to store. You can either serve it hot or cold. When storing it, you have to allow it to cool down completely first. Then, once cooled, you can place it inside of a clean and sterilized glass jar.
  • We highly recommend boiling your jar before storing your mixed berry sauce inside, as it will kill any potential bacteria that can grow. This will help extend the shelf life of the sauce and help preserve the flavor for longer.
  • You can keep the berry compote inside of the fridge for at least a week. Make sure your fridge doesn't have any fluctuating temperatures to prevent any deterioration.

Notes

If you cannot get your hands on fresh berries, you can also use frozen ones. They work equally well and you don't even have to defrost them before cooking them. You may just want to cook them for slightly longer to make your mixed berry sauce thicker.
You can adjust the consistency of this berry compote for cheesecake by adding a bit of water. Only add a tablespoon at a time and mix it in thoroughly before adding another. And, if you accidentally made it too thin, you can continue simmering it to allow the excess moisture to evaporate.
