Ingredients for the crust

  • 3 cups ground Oreo cookies, about 36 cookies
  • 1/2 cup unsalted butter, melted

Ingredients for the filling

  • 16 ounces of full-fat Philadelphia cream cheese, softened
  • 1/2 cup caster sugar
  • 2 large eggs, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup whipping cream

Instructions

  • Prepare the Oreo crust mixture
    First, preheat your oven to 360ºF (180ºC). Line the baking dish with non-stick baking paper. The sides can be sprayed with non-stick cooking spray or brushed with melted butter. Set the pan aside.
    Next, place the Oreo cookies inside a food processor. You don't have to remove their filling. Crush them until you have a uniform fine crumb.
    Add the melted and cooled butter to the crushed Oreos. Mix it in well until you have a wet cheesecake crust mixture. Set it aside.

  • Make the Philadelphia cheesecake batter
    Place the softened cream cheese in a large mixing bowl. Beat it on medium-high for a minute or two. Then, add the caster sugar. Increase the mixer speed to high. Beat the ingredients for about 5 minutes, or until they are incredibly fluffy and airy.
    Then, add one egg to the cream cheese. Incorporate it using medium speed. Once it is almost fully blended in, add the next egg. Mix it in very well and don't forget to scrape down the sides as you mix.

  • Assemble and bake
    Divide the Oreo crumb in two. Press one-half of the mixture into the bottom of the baking dish. Make sure it's packed tightly.
    Add the cheesecake batter. Level it with your spatula. Then, bake the cheesecake for about 20-30 minutes. The cheesecake is ready when only the inner 2-3 inches still jiggles.
    Then, add the remaining Oreo crumb over the top of the cheesecake. Make sure that the crumb is spread in an even layer. Don't press on it.
    Allow the cheesecake to bake for another 10-15 minutes, or until it's completely set.
  • Cool and portion your cheesecake bites
    Once the Philadelphia Oreo cheesecake bites have been baked, switch off the oven and open the door slightly. Allow them to cool for 1 hour. Then, place them at room temperature and leave them to cool for another hour.
    Wrap the entire tray with plastic wrap and leave them to set in the fridge for 4 hours.
    Once they have set, cut the blocks into 1-inch cubes and serve them immediately.

Notes

If you want to add even more texture, mix some Oreo crumbs into the cheesecake batter.
You can change the size of the cheesecake bites. If you make 2-inch blocks, you will get 16 pieces. If you make 1 1/2-inch blocks, you will get about 25 pieces plus some offcuts.
