  • 2 cups digestive biscuits or Graham crackers
  • 1/3 cup caster sugar
  • 8 tablespoons salted butter, melted

  • 24 ounces full-fat cream cheese, softened at room temperature
  • 3/4 cup caster sugar
  • 2 teaspoons vanilla extract
  • 1 1/2 cups heavy cream, room temperature
  • 5 ounces Galaxy Caramel chocolate bars, chopped

Instructions

  • Make the cheesecake crust
    To start, line a springform cake pan with non-stick baking paper at the bottom. Then, spray the sides with non-stick baking spray. Set it aside.
    Next, start making the cheesecake crust. Place the biscuits or crackers inside a food processor. Pulse it until you have a uniform fine crumb. Then, add the caster sugar and melted butter. Mix until you have a uniform wet crumb mixture.

  • Set the cheesecake crust
    Press the fine crumbs into the lined cheesecake pan. Use the back of a flat measuring cup or glass to level the crumbs and pack them in tightly.
    You can create a slight edge around the side of the pan if you'd like. But, it isn't necessary. Then, set the crust inside the fridge to harden for about 30 minutes.
  • Make the no-bake cheesecake batter
    To start, place the cream cheese, caster sugar, and vanilla extract in a large mixing bowl. Beat the ingredients until the sugar starts to dissolve and the mixture becomes fluffy. You should also have a lump-free cream cheese base.
    Then, add the heavy cream and whip the mixture on high. Keep mixing until the cheesecake batter becomes fluffy and can hold its shape.
    Finally, fold in the chopped Galaxy caramel bar and make sure it's well distributed.

  • Set the cheesecake
    The next step in this Galaxy caramel cheesecake recipe is to pour the batter into your set cheesecake crust. Then, wrap the entire pan with plastic or saran wrap.
    Place the cheesecake inside the fridge and allow it to set for at least 6 hours. Preferably, it should be set overnight (10 hours).
  • Remove the cheesecake from the pan
    Once your cheesecake has been set, you can remove it from the pan. Smooth the outside with a slightly heated palette knife to create a beautifully smooth surface.
    Place the cheesecake on a serving board or cake stand.
  • Decorate your cheesecake

Notes

You can make your own chocolate sauce using melted Galaxy chocolate bars. It is incredibly easy but takes more time and effort.
The same goes for the caramel sauce. There are loads of easy recipes out there. But again, they require extra effort and work.
